Grilled Peach Salad
After a long weekend of eating and drinking, Monday afternoon called for something remotely healthy to accompany the skirt steak, grilled corn and other veggies for an early dinner before heading back to the city. I had never grilled peaches but seen pictures floating around the Internets so thought I'd give 'er a whirl for a side arugula salad. I didn't follow any specific recipe but just sliced the peaches in wedges and grilled until they looked like they did in the photo above. Mixed in with caramelized walnuts and goat cheese crumbles before finishing with a little vinaigrette...magnifique!
