Blueberry, Feta & Toasted Almond Quinoa


With spring upon us, I've been looking for different ways to infuse it into some of my favorite salads. I saw this quinoa mixture in the Whole Foods salad bar the other day. For the low price of $7 I purchased just under 1/8th of a pound and loved it. Figured I would try it at home for a fraction of the Whole Foods price. You could even add arugula, red onions or switch out goat cheese for feta. Either way it's super quick, easy and keeps well so you can make a big batch.


Ingredients
1 cup uncooked quinoa
1/4 cup sliced almonds, toasted
1/4 tsp salt
1/2 cup blueberries
1T lemon juice
1/2 cup crumbled feta cheese

1) Boil 2 cups water with 1 cup uncooked quinoa and let simmer for 10 minutes.
2) Mix cooked quinoa with the rest of the ingredients and serve!
